- 2 (15-ounce) cans pinto beans, drained and rinsed
- 2 (10-ounce) cans diced tomatoes with green chiles
- 1 cup frozen corn kernels
- 1/2 cup sour cream
- 1 (8-ounce) package shredded Mexican-blend cheese, divided (about 2 cups)
- 1 (32-ounce) package frozen potato tots
- Chopped fresh cilantro, optional
Instructions
- Preheat your oven to 425°F.
- Grease a 9×13-inch baking dish with nonstick spray.
- In a large skillet over medium-high heat, heat canola oil and sauté chopped onions until softened (about 4 minutes). Add ground beef, breaking it apart as it cooks until browned (5-6 minutes).
- Stir in taco seasoning, garlic powder, and kosher salt; cook until fragrant (about 1 minute).
