  • 1 (1-ounce) envelope taco seasoning mix

  • 1/2 teaspoon kosher salt
  • 2 (15-ounce) cans pinto beans, drained and rinsed
  • 2 (10-ounce) cans diced tomatoes with green chiles
  • 1 cup frozen corn kernels
  • 1/2 cup sour cream
  • 1 (8-ounce) package shredded Mexican-blend cheese, divided (about 2 cups)
  • 1 (32-ounce) package frozen potato tots
  • Chopped fresh cilantro, optional

Instructions

  1. Preheat your oven to 425°F.
  2. Grease a 9×13-inch baking dish with nonstick spray.
  3. In a large skillet over medium-high heat, heat canola oil and sauté chopped onions until softened (about 4 minutes). Add ground beef, breaking it apart as it cooks until browned (5-6 minutes).
  4. Stir in taco seasoning, garlic powder, and kosher salt; cook until fragrant (about 1 minute).
  5. Mix in pinto beans, diced tomatoes, and corn. Remove from heat and blend in sour cream and half of the shredded cheese.
  6. Spread the filling into the greased baking dish, top with remaining cheese, then arrange potato tots in a single layer on top.
  7. Bake for 25-30 minutes or until potato tots are golden brown and filling is bubbling around edges.
  8. Serve warm garnished with fresh cilantro if desired.
