Ingredients
- 8 slices bacon
- 1 ring kielbasa (13.9 ounces)
- 1 pound ground beef
- 1 yellow onion
- 1 green bell pepper
- 2 medium russet potatoes
- 10 ounces frozen mixed vegetables
- 2 cans diced tomatoes (14.5 ounces each)
- 2 cans kidney beans (15.25 ounces each)
- 1 can whole kernel corn (15.25 ounces)
- 1 teaspoon garlic, minced
- ¼ cup all-purpose flour
- 1 tablespoon chili powder
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 4 cups beef broth
Instructions
- Cook bacon in a heavy-bottomed pot over medium heat until crispy (10-12 minutes). Remove excess grease.
- Brown the kielbasa in the remaining grease for about 3-4 minutes; remove from pot.
- Sauté ground beef with onion, green pepper, and garlic until no longer pink (6-8 minutes); drain excess liquid.
- Stir in flour and cook for 1 minute; add back bacon and kielbasa along with all other ingredients.
- Bring to a boil; cover and simmer on low for 30 minutes until potatoes are tender.
- Serve hot, garnished with chopped parsley.
