  • 1/4 cup all-purpose flour
  • 1/4 cup chopped cilantro
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • 2 limes (juiced)
  • 1 tbsp brown sugar
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1 garlic clove (minced)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat coconut and olive oil in a large oven-safe skillet over medium heat.
  3. In a mixing bowl, combine flour and cilantro. Coat each chicken breast in this mixture and sear in the skillet for about 3-4 minutes on each side until golden brown.
  4. Add minced garlic to the skillet and cook for another 30 seconds.
  5. Mix coconut milk, chicken broth, brown sugar, and juice from one lime in a separate bowl. Pour this sauce over the chicken.
  6. Transfer the skillet to the oven and bake for 10-15 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven, drizzle with juice from the remaining lime, season as desired, garnish with cilantro and green onions before serving.
