  • 3 and 1/2 cups all-purpose flour

  • 6 roma tomatoes, cut in half
  • 3 tablespoons olive oil
  • 15 ounces tomato puree
  • 2 tablespoons tomato paste
  • 3 cloves garlic, finely minced
  • 1 tablespoon sugar
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Activate yeast by mixing warm water and sugar in a small bowl; sprinkle yeast on top and let sit until frothy.
  2. In a mixing bowl, combine flour and salt; add activated yeast mixture and olive oil, mixing until combined.
  3. Knead the dough on a floured surface for about 5–8 minutes until smooth; let rise in an oiled bowl covered with a cloth for about 1 hour or until doubled in size.
  4. For the topping, sauté minced garlic in olive oil, then stir in tomato puree, tomato paste, sugar, balsamic vinegar, basil, oregano, salt, and pepper; simmer for about 10 minutes.
  5. Preheat oven to 400°F (200°C). Grease a baking dish with olive oil; roll out dough to fit the dish and spread the sauce evenly over it.
  6. Top with halved tomatoes cut side up and sprinkle with grated Locatelli cheese; bake for approximately 40 minutes or until golden brown.
